A GETAWAY IN THE WOODS + HOMEMADE GOLDEN MILK

Sweet moments of wellness, gratitude + time spent in the woods are so good for the soul. Thanks to the lovely Getaway House, I had the opportunity to experience just that. For a couple of days, I got to unplug, step away from the hustle and bustle of the world + spend some quality time with a sweet friend of mine in the beautiful Mount Adams area in Washington. With just a 2-hour drive from Portland, we packed our bags + headed up to the series of tiny cabins nestled in the woods on a cloudy, autumn day - the perfect mix for a cozy + adventurous getaway.

My dear friend + I had the most wonderful time here filled with s’mores + hot tea by the campfire, card games, slow mornings reading, filling our lungs with fresh mountain air and being fully present doing some of the things that we love the most. After a few days away from technology, surrounded by nature and immersed in the beautiful woods, we were left feeling so rejuvenated and inspired. time spent in the forest is time well spent. Staying here was such an important reminder to take the time to slow down, step away from the busy world for a bit and do whatever you need to fuel your soul.

HOMEMADE GOLDEN MILK

I love the idea of brining a little piece of home wherever you go to make traveling + trips a little more comforting. One of my favorite drinks to have around this time of year is a golden milk latte - I’ve found a simple way to make it at home and decided it would be the perfect warm drink to enjoy in the mountains at the getaway house.

Golden milk is made with a variety of antioxidant ingredients between cinnamon, ginger, turmeric + peppercorns that will leave you glowing from the inside out. These ingredients also help boost your immune system, are anti-inflammatory, improves digestion + it’s a warm, delicious drink that you can enjoy anytime throughout the day. Having homemade golden milk in the mountains with my sweet friend was the perfect way to end our wonderful trip.

INGREDIENTS:

  • 12 oz non-dairy milk (I use oat milk - tastes so good w/ this recipe)

  • 1 Tablespoon coconut oil

  • 2 teaspoons of ground tumeric

  • a pinch of cracked black pepper

  • sweetener of choice - i use organic agave syrup

  • some fresh ginger - i use a teaspoon of a ginger stir-in paste

  • optional - top it off w/ some cinnamon + for an extra treat - some almond milk whipped cream

DIRECTIONS:

Melt coconut oil in a mug and whisk with turmeric and pepper. Add ginger & sweetener to taste. Let sit for a minute and then whisk in hot milk. Top with cinnamon + whipped cream if you want to! enjoy!
